Czech Please, 2008-01-27 At Angel, you can see a lot of thought went into the design of the dining room. They did a beautiful job. Lighting was low and on the romantic side. The beige color scheme throughout adds to the intimate atmosphere. The music was at the right level.

The Prague Spoon, 2008-02-04 Angel is far from perfect. But in a city flooded with copycat recipes and careful menus, this latest Old Town restaurant venture is a much-needed departure from the Prague norm.
Heavenly fusion - New Angel does a divine job of blending East and West
The Prague Post, 2008-01-16 Chinese cooks long ago matched five spices with duck in a perfect marriage of sweet and down-to-earth flavors. The people of southwest France turned an old-fashioned preservation technique, cooking meat and sealing it in fat, into a gloriously delicate dish known as duck confit. Angel’s kitchen brings these together in a spring roll-style presentation. The combination of Asian and Continental traditions isn’t much of a stretch in a world accustomed to brash culinary fusions. Five spices — anise and cinnamon, clove, fennel and pepper — demand care, however. Too much of the willful blend sacrifices other ingredients to its virtually unstoppable, dense, candied surge. Yet Smith and her staff handle the East-West fusion with great sensitivity. Bright elements strike the palate then collapse into a richer, earthier composition. The addition of almost-sweet mint prevents the entire mélange from sinking into more serious realms. |
